Castrillón's journey into the modeling world was, by her own account, a matter of chance. Fresh out of university with a degree in Advertising, she embarked on a trip to Bogotá. While accompanying a friend to an audition, a director unexpectedly inquired why she wasn't among the aspiring models. Initially hesitant due to self-consciousness about her braces, Castrillón repeatedly declined. However, the casting director's persistent persuasion eventually swayed her to participate. To her astonishment, she was notified the following day that she had been chosen for the advertising campaign, out of thousands of hopefuls nationwide. This unexpected opportunity marked the beginning of her modeling career.

Just one year into her modeling endeavors, Castrillón received an invitation to compete in the widely recognized Miss Playboy TV contest. Emerging victorious from a field of hundreds of models representing various agencies, she earned the privilege of representing Colombia in the Miss Playboy TV Latin America pageant held in Uruguay. Although she secured the runner-up position, the initial winner, Miss Spain, was later dethroned, elevating Castrillón to the first place. This victory led to a year-long contract with Playboy TV. The engagement extended to nearly five years, during which she participated in and hosted numerous programs for the channel, becoming its prominent face. The immense success of these shows meant many continued to air long after their initial run.

Later, Castrillón decided to reignite her modeling pursuits, reactivating her online presence by launching her first Instagram account. She now maintains three personal social media profiles, in addition to one for her company. Reports from various media outlets have positioned Viviana as the third most followed Colombian woman on Instagram globally, surpassed only by Shakira and Sofía Vergara. Her distinctive online appeal prompted Playboy TV to approach her the previous year with an offer to develop a custom television program solely dedicated to her. This show was slated for broadcast in September 2016, reaching audiences in over 40 countries.
