Her most notable modeling achievement came when Playboy magazine selected her as the Playmate of the Month for March 1981, with photographer Arny Freytag capturing her centerfold. Following this prominent feature, she expanded her modeling work to appear in various publications, including FIT magazine, where she graced the cover and starred in swimwear and fitness advertisements under publisher Bob Anderson's direction. Her popularity in Playboy continued, with additional cover appearances in September 1982 and September 1983.

During the 1980s, Herrin transitioned into acting roles. She appeared in the 1984 film Ghostbusters, playing a supernatural female character in a scene with Dan Aykroyd that was ultimately condensed to a brief moment within a montage sequence. That same year, she took on the role of Angelina in Romancing the Stone, portraying the heroine from Kathleen Turner's romantic storyline in the film's opening sequences. Additionally, Herrin became one of three models featured in multiple music videos for the band ZZ Top during the mid-1980s, appearing alongside fellow Playmate Jeana Tomasino.
